Fourth of July and Buko Salad
My husband’s heritage is American and it is important for us to honor his heritage and his culture. Especially because we reap the benefits of living in America…
..So today we celebrate America’s Independence day. July 4.
We plan to go and see fireworks display this evening after a cook out.
We also plan to enjoy a summer treat with Pinoy family…Pinoy style…
Introducing…
BUKO (BOO-koh) SALAD (Young Coconut Salad)
- You can make this baby in literally 15 minutes. Well. If you go about it the way I did, that is.
Here are the players:
INGREDIENTS:2 24z jar of Young Coconut drained and rinsed(you can get these at Oriental stores)3 Cans of Lite Fruit Cocktail drained1 Jar of Kakao (Sugar Palm. again, Oriental store) drained and rinsed{insert: this normally also calls for Nata de Coco but I didn’t have any. No biggie.}1 Can of Condensed milk (whatever brand you like)1/2 cup Whipping cream (Pinoys back home use Nestle Cream. I used Walmart brand)
Rinse and drain the first 3 ingredients.
I had trouble with the young coconuts…because this below was a lie!
It took me forever to open the cap (even after doing the usual trick: tak-tak dito tak-tak dyan). I had to get my hubby to open it for me.
Anyway, I prefer draining and rinsing the first three ingredients because they have been swimming in glorious juices of sweetness for I don’t know how long. I don’t want this dessert to be overwhelmingly rich. Just sweet enough yet still coconut-y and refreshing.
Combine the rinsed ingredients in a large bowl. And then pour the can of condense milk in…just like so:
Add the 1/2 cup of whipping cream and mix it all up. Whalla! Buko Salad done!
I made this salad the night prior because it needs to stay in the fridge 24 hours. You can speed up the chilling process by sticking it in the freezer for an hour or so.
I chose to overnight because it seems to taste better that way…and I can be patient…
Well, maybe not quite patient. But somebody just had to try it to make sure it tasted just right. Um–hmmm.
Just one word: Masarap! (delicious)
This is one of my favorite Filipino desserts.

I like your salad, but really I was way off the charts to see John & Angie in the top pic, holding their grandbaby!!! I haven’t seen them in years, and I miss them. Try to stay cool in your sweltering hometown! Happy 4th!
